History of kabab


Before moving ahead we should know that what is kabab? A kabab or Kabab or kebob is basically a grilled meat, which is very popular in the Middle Eastern part of the globe. It is a Turkish word which means grill. Apart from grilled meat, a kabab is available in various variants such as grilled vegetables, chicken, cottage cheese. This can be prepared very easily in the home either by using the grill or by using barbecue techniques. Well in addition to this the traditional meaning of kabab is a lamp which is a young sheep or ward of sheep(s).
There are two types of kabab dishes which are very famous globally and they are shish kabab and doner kabab.
If we are discussing shish kabab then it is grilled vegetable kabab consisting of small pieces of flesh or some see food accompanied by some vegetables and most common of them are onions, tomatoes, and bell peppers well assembled on the skewer and this is very famous in contemporary American and British English. In some countries such as India where localities mostly don’t eat chicken use cottage cheese in spite of flesh or meat and sometimes they also avoid onions as well. The term shish is a Turkish term used for skewer while doner kababs are meat cooked on a vertical rotisserie.
In the Muslim arena, the term kabab is itself a broad term which is consist of various grilled meat dishes which may include beef, goat, chicken, fish, pork etc.
In addition to this, there are many grilled dishes containing only vegetables are also categorized as a kabab and one of them is our hara bhara kabab, whose recipe we will be going to learn today.

Time required: 30 minutes
Servings: 3-4 people
Ingredients
Bread slice – 1 crushed
Corn flour – 2-4 tbsp
Green chili – 1-3 chopped or as per tasted
Olive Oil – For grilling.
Potatoes – 2 boiled and mashed
Spices- As per your taste or you can use given ratio
Spinach – ½ kg

 

How to make hara bhara kabab


  1. First of all, boil your potatoes and mash them well.
  2. Now take out your spinach and wash it well to remove all the mud.
  3. Now grate your spinach either by first boiling it and later mashing it or by grinding it in the grinder to make a thick batter.
  4. Note: Don’t use water with spinach while grinding as much which leads to making the spinach stuff liquid or thin.

  5. Add corn flour to the spinach mash. Mix it well along with the spices.
  6. Add potatoes to the stuff and make a fine batter to grill. You can also add bread scrums to make it crispier.
  7. Note: Your batter shouldn’t be lousy or thin or with water. It should be dry as much as it could be.

  8. Take the mixture or batter in a small quantity in hand and shape it first into a ball and then press it tightly with your both palms to make a flat spherical stuff. Repeat the above step with the remaining mixture.
  9. Once all the mixture is converted into the desired shape take out a grill sandwich maker preheat it a bit and start placing the balls into it and cook it for a while till it turns to golden brown color.
  10. Note: You can also deep fry them in a frying pan on a medium flame gas for some three to five minutes.

  11. Your crispy and tasty hara bhara kabab are ready to eat.
  12. Enjoy hot and crispy kabab with a sauce you would like to have or you can make a green chili and coriander dip.

Note: You can also make a gravy and pour these kabab’s in it to make it a main course dish or you can also use them as a veg Pattie for the filling of a burger.
